Not racing down the streets of the city, racing at stadiums like moto GP and stuff.

You will have to start out as a privateer, meaning you need to go and purchase the bike, Talk to your dealer after you have raced a couple of seasons and are comfortable with where you are in your skills. Once you start winning most of your races you can look for sponsors…then if you are good enough you can get a full factory ride.

just curious, what’s the highest level of Street Bike racing like how F1 is the highest level of open wheel car racing. i’ve tried to look for it and i think it’s MotoGP, am i right?

Yes MotoGP is the Pinnacle of Motorcycle racing.
some could argue the TT is a higher level, but the fastest bikes with the best riders are found in MotoGP
